On May 3, Poland celebrates a national and public holiday known as May 3 Constitution Day or May 3 National Holiday. It commemorates the adoption of the Constitution of May 3, 1791. The 1791 Constitution was adopted by the Great Sejm of the Polish–Lithuanian Commonwealth. It was designed to amend the country’s political system by redressing its defects. When the sovereign Polish state ceased to exists as a result of the partitions of Poland, the Constitution became a symbol of hope for restoration of the country’s sovereignty. Polish Constitution Day was first celebrated in 1792. It was banned during the partitions of Poland, but many people celebrated it unofficially. Following the establishment of the Second Polish Republic, Constitution Day was declared an official holiday in 1919. It was abolished during the communist rule, but after the fall of communism and establishment of the Republic of Poland the holiday was re-established once again. May 3 National Holiday is considered the most important holiday in Poland. On this day, numerous festivities take place throughout the country. The official celebration typically includes hoisting of the national flag, speeches by public figures, military parades, cannon salvos, patriotic songs, celebratory masses, concerts, exhibitions.
4 boneless pork chops ½ inch thick
1/4 cup flour
Salt and pepper
1 teaspoon dried marjoram
1 teaspoon dried parsley
2 eggs whisked
1 cup fine breadcrumbs
1 tablespoon lemon zest

Use a meat mallet to pound the pork cutlets to about ¼ inch thickness, set aside. Get 3 shallow bowl, first bowl add flour , salt and pepper, second bowl add eggs and third bowl mix breadcrumbs with marjoram,parsley, lemon zest. Heat the oil in a large skillet on medium high heat Dip the cutlets first in the flour then in the egg mixture, and then into the mixture of bread crumbs, pressing crumbs in to coat. Fry them for 4 minutes on each side until golden brown.
