Pakistan Day (Youm-e-Pakistan) or Republic Day is a national holiday in Pakistan to commemorate the Lahore Resolution of 1940 and the adoption of the first constitution of Pakistan during the transition of the Dominion of Pakistan to the Islamic Republic of Pakistan on 23 March 1956 making Pakistan the world’s first Islamic republic. Republic Day parade by the armed forces is a common celebration for the event.
- 4 chicken thighs and 1 chicken breast
- 3 tablespoons oil
- 1 teaspoon red chili peppers
- 2 large tomatoes diced
- 4 teaspoons fresh ginger minced
- 1 teaspoon allspice
- 1/2teaspoon cumin
- 1/2 teaspoon Tumeric
- 1/2 cup vegetable broth
- 3 tablespoons of yogurt
- Salt and pepper
In a large pan add oil and brown chicken for 8 minutes a side when done set aside and cool.When cool debone and cube, set aside for later. In the same pan add tomatoes and chili peppers, cook until almost a paste then add ginger, allspice, Tumeric,cumin and chicken simmer for 25 minutes. Add broth as needed. When done drop in yogurt, salt and pepper.Serve with Naan or rice.
