The Independence Day of Iran is celebrated on 1, April every year to commemorate the day the country became a theocratic Islamic Republic state in the year 1979. Following the triumph of the Islamic Revolution of 1979, led by the Ayatollah Khomeini, the country was officially renamed the Islamic Republic of Iran.
• 1 cup chickpeas(soaked overnight)
• 1 cup white beans(soaked overnight)
• 2 tablespoons oil
• 3 lamb shanks
• 2 garlic pods minced
1 Cinnimon stick
• 1 teaspoon tumeric
• 2 black limes cut in half(regular limes if you can’t find black)If using regular limes just use lime juice
• 2 tablespoons cilantro chopped
• 1 large onion chopped
• 2 large potatoes peeled and diced big
• 3 large tomatoes diced
• Salt and pepper
In a large pan heat oil and brown lamb 2 minutes on all sides, add 8 cups of heated water, also add cinnimon stick,tumeric, garlic, limes and onions bring to a boil and then reduce heat to medium low and skim off foam. Cover pot and simmer for 2 hours. After 2 hours remove lamb and debone shred meat with fingers. Return meat to pot and add drained chickpeas and white beans, tomatoes and potatoes, cilantro salt and pepper to taste.Cook for 30 minutes.
When vegetables are done strain stew over a bowl, keep liquid you may eat as a soup. Mash the strained stew and serve with yogurt and flatbread.
