Guam’s Biggest celebration

After World War II was over community leader Agueda Iglesias Johnston convinced US military leaders on Guam to support a celebration to commemorate the Liberation of the island from the Japanese. This celebration continues to this day as one of Guam’s holidays – Liberation Day, which is celebrated on July 21st.

  • Serves 6
    Ingredients:
    ▪ Whole cut up chicken
    ▪ 1 large onion diced
    ▪ 2 tablespoons oil
    ▪ 3 minced garlic pods
    ▪ 1 cup of water
    ▪ ½ cup vinegar
    ▪ 1/3 cup soy sauce
    ▪ 2 hot peppers diced
  • 1 cup coconut milk

Method:
In a large frying pan brown chicken for 5 minutes each side add onions and more oil then add garlic, hot peppers and pepper, cook for 1 minute. Pour in water vinegar, coconut milk and soy sauce. Simmer on medium low heat for 30 minutes, take out chicken ( keep warm) reduce juice to half and serve over rice and chicken.
