Statehood Day
The autonomous entity of Bosnia and Herzegovina, the Federation of Bosnia and Herzegovina, has its own public holiday, Statehood Day, that isn’t celebrated in the Republika Srpska. This holiday annually falls on November 25. The politicians of the Federation of Bosnia and Herzegovina chose November 25 as Statehood Day to commemorate the day of adoption of the resolution, declaring that Bosnia and Herzegovina is an equal community of Serbs, Bosniaks and Croats. This resolution was adopted in 1943, when Yugoslavia was occupied and divided between Germany, Italy, Hungary and Bulgaria.

Ingredients:
- 1/4 cup lemon juice
- 1/3 cup olive oil
- 1/4 cup diced onions
- 1 garlic glove minced
- 2 tablespoon minced parsley
- salt and pepper
- 3 pound of chicken cubed
- salt and pepper
- 1/4 cup red onion sliced
- wooden skewers soaked in water
Method:
Mix first 6 ingredients together in a big bowl, then add cubed chicken, stir and cover with plastic wrap. Marinade for 5 hours then strain, put meat on skewers very tight. Salt and pepper to taste. Heat grill or BBQ cook until meat is firm, Plate and toss red onions on top. Serve with lemon potatoes.
Lemon Potatoes:
- 4 potatoes cut into wedges
- 2 tablespoon oil
- 4 tablespoons fresh lemon juice
- salt and pepper
Method:
Mix potatoes with oil and juice, let sit on counter for 15 minutes, then lay flat on the grill or on a pan in the oven cook until fork tender.
