Founding of Democratic Republic of Azerbaijan
The Azerbaijan Democratic Republic was founded by the Azerbaijani National Council in Tiflis on May 28, 1918 after the collapse of the Russian Empire that began with the Russian Revolution of 1917. The Muslim representation in the defunct Seim had constituted itself into the Azerbaijani National Council, and on May 28, 1918 proclaimed that a new nation was born. This is the text of the proclamation, which was to be referred to later on as the National Charter. So far only a geographical reference, Azerbaijan now became the name of a state, and some 2 million people, called variously Tatars, Transcaucasian Muslims and Caucasian Turks, officially became Azerbaijanis.

Serves 4
Ingredients:
- 3 cups of cooked jasmine rice
- 1 cup peeled chestnuts
- 2 tablespoon butter
- 1/2 cup barberries (sour cherries for a sub)
- 1/2 cup dates sliced
- 1/2 cup currants
- 1/2 cup dried apricots sliced
- 1 onion sliced very thin
- 3 chicken breast cut in chunks
- 2 tablespoon oil
- Salt and pepper to taste
- 2 tablespoons butter
- 4 saffron threads and 1/3 cup hot water
Method:
Cook rice until almost done, if the package says 20 minutes cook 15 minutes. In the mean time in a dry pan toast the chestnuts and in the same pan add butter and fruit saute for 2 minutes then set aside. In a large pot add oil and brown chicken for 2 minutes and then add onions right on top of chicken cover and steam for 2 minutes, when done lay right on top (do not mix) half the rice and then the fruit mixture on top the rice, then add the rest of the rice and butter on top of rice. Do not mix this is a layered dish, mix the saffron with the water pour on top of rice, then cook for 30 minutes. After 30 minutes arrange on a platter and serve.
